Your perfect side dish... this Bombay Potato dish can be partnered with cauliflower and a sprinkle of mustards seeds!
Ingredients
1 jar of Bombay Potato Base
Half a Cauliflower (cut into florets)
450g Potatoes (peeled and diced)
1/2 teaspoon of Turmeric (optional)
4 tbs Fresh Coriander (roughly chopped)
Salt to taste
Method
In a pan place the diced potatoes and cauliflower florets in boiling water. Add the turmeric and simmer for approximately 5 minutes.
Drain the water, add the Bombay Potato Base and approximately 1/2 a jar of cold water. Bring to boil and simmer gently until potatoes are cooked. (Add more water if needed)
Garnish with fresh chopped coriander and add freshy chopped chillies for extra heat.
Serve as a side dish or in toasties with tomato ketchup.
